Ayam Cencaluk Tunku Azizah 💐Cencaluk is a fermented shrimp sauce. 💐Mostly used as a condiment / sauce on the side in Malay dishes. 💐 I am surprised when I saw that it's available at mostly Asian ( International ) stores here in my area the 🇺🇸 . I guessed it is also popular among Vietnamese and Filipinos? 🌻Making Ayam Cencaluk is not only a great way to use up the leftover cencaluk in your fridge, but it's also incredibly versatile. We really love and enjoyed it! 🛒Ingredients • Chicken breast with bones, remove skin • 4-5 Tbsp cencalok •1-2 Tbsp sugar 🍲Marinate the above ingredients and set aside. •Cooking Oil •8 - 10pcs shallots, slice •6 pcs garlic, slice •1 thumbsize ginger, julienned •4 Lemongrass, bruise •1 Habanero ( or chilli padi), slice •1 large onions, slice • 1- 2 Tbsp Soya Sauce • Tomatoes, cut into wedges 🍽Method 1. Marinate chicken with sugar and cencaluk, set aside. 2. In a pan heat up oil 3. Add all of the aromatics shallots, garlic, ginger, lemongrass 4. Add habanero for extra spiciness •Cook until frangrant •Add marinated chicken •Stir well cook until the chicken is properly cooked and crunchy or crusty (garing) • add the juice from the cencaluk & sugar marination • Stir well, add onions and soya sauce • Taste taste taste, I didn't add any salt or any seasoning. The combinations of cencaluk sugar, the aromatics & soya sauce - The taste is so delicious and already perfect as it is. •Turn off the heat and add on tomatoes. Serve with rice and other side dishes.
