Recipe -2 cups pasta -1 cup Ricotta cheese -1 cup Parmesan cheese -1 cup pasta water -Zest of 1 lemon -2 tbsp lemon juice -1 handful of arugula -Fresh basil for garnish -Salt and pepper to taste 1.Bring a large pot of salted water to a boil and cook the pasta until al dente. Drain and reserve 1 cup of pasta water. 2.In the same pot, combine the pasta, ricotta cheese, Parmesan cheese, lemon zest, and lemon juice. Mix well. 3.Gradually add the reserved pasta water to create a creamy sauce. The more water you add, the creamier the sauce. 4.Stir in the arugula and season with salt and pepper to taste. 5.Garnish with fresh basil and more Parmesan cheese before serving.
