Here’s how I made this stunning loaf! 🥖🤤😍 I started with ripe active starter and my beginner sourdough recipe (video linked in profile)- but I swapped 50g of bread flour with 50g whole wheat flour for extra depth of flavor and structure! I also added 25g of water to make up for the absorption from the flour.  I bulk fermented on the counter for about eight hours at around 75°F, shaped, and cold proofed for 24 hours.  Baked at 450°F: 30 minutes covered, 15 minutes uncovered in my @krustic_crafts Dutch oven (code Hayley20 for $20 off until Feb 15th!) Rough timeline and estimated amounts: mix dough at 3pm (1 cup starter before it was active, it was 2 cups when it was active, 1.5 cups water, 2 cups bread flour, 1/2 cup whole wheat flour, 1.5 or so teaspoons salt) did 3 folds at 3:45,4:30,5:30 or so, then shaped it at 730 and baked it at 9:15. #simplesourdough #breadtok #fyp #sourdoughstarter #sourdoughbread #lowhydrationdough

Know this: ~2% of salt is the only thing you wanna stick to so your loaves aren’t inedible or too salty, but besides that you DO YOU! A recipe is too hard to handle? Use less water! You made too much starter and wanna use it up? Put more in the dough and it’ll ferment faster! You’re tired and want to do folds and go to bed and leave it on the counter? Add less starter! Early morning focaccia that I mixed at 6 am, baked at 11 and was eaten by noon.
