This loaf was completely unserious. I mixed the starter at 8am, mixed the dough at 4pm and did folds til about 8, then I put it in the fridge at 9pm. The next morning at 8am I shaped it and put it on the counter, baked it at 11am. Please try this for your first loaf: 1part sourdough starter (I think that jar I used is 12oz which is 1.5 cups), 1part water and 3parts all purpose flour. A nice palm full of salt! If you wanted to start this earlier in the day and your starter is ready, skip the fridge and bake it 6/8 hours after mixing. Honey whole wheat sandwich loaf: 1.5 cups water (do less if you’re intimidated by wet dough), 1/2 cup active starter, 1 cup whole wheat flour, 2 cups all purpose, 1 t salt, a glug of olive oil, a hearty spoonful of honey. Here's how I made this stunning sunflower seed sourdough loaf! 🌻 I started with ripe active starter and my beginner sourdough recipe- but I swapped 20g of bread flour for dark rye flour for extra depth of flavor. Bulk fermented overnight for around 10 hours at about 72°F (didn’t measure temp because, well... I was sleeping). In the morning, I shaped the dough, sprayed the top with water, and rolled it into raw organic sunflower seeds. I placed it in the banneton, stitched it up and let it cold proof in the fridge for 7 hours. Baked at 450°F: 30 minutes covered, 15 minutes uncovered.
