Baking Soda 4 C. Water (warm) 1 Egg (lightly beaten) Coarse Salt or Cinnamon Sugar Heat milk in the microwave for 1-2 minutes just till warm. In a large mixing bowl add the warm milk, yeast, and sugar; let bloom for 5 minutes. Add butter, salt, and flour to the yeast mixture mixing with a wooden spoon untill dough comes together. Lightly flour work area and knead the dough for couple of minutes. Dough is no longer sticky it should be smooth. Lightly oil; cover the dough and allow to rise for 1 hour. Punch dough, cut pretzel dough into 6-8 portions. Form each portion of dough into a long skinny rope. Shape the dough into a pretzel. Prepare a baking soda bath by adding baking soda and warm water to a bowl then dip each pretzel into water for a few seconds. Place on baking sheet lined with parchment paper. Brush each pretzel with egg wash, sprinkle with coarse salt or a cinnamon sugar mixture. Bake pretzels at 450°F for 12-15 minutes. Let cool slightly. Pretzels are delicious dipped in Cheese, mustard, or eat plain Let the pretzels cool completely before storing in an airtight container.
