Variations of these stuffed onions pop up all over the globe: the Middle East, Turkey, and Greece all have their own version. I drew special inspiration from Iraqi dolmas for my recipe. 🇮🇶 These melt-in-your-mouth onions burst with ground meat, fragrant spices, and rice, then simmer in a tangy tomato sauce until caramelized and soft.
