#overnight #tatertot #casserole #brunch #breakfast #EasyRecipe #Recipe #carnationmilk #carnationnation Overnight Tater Tot Breakfast Casserole ½ yellow onion, minced 1 Tbsp olive oil 1lb bulk breakfast sausage (regular or spicy for an extra kick) 1 red bell pepper, minced 1 16oz bag of frozen tater tots 1 12oz can Carnation Evaporated Milk 4 eggs ½ tsp salt ¼ tsp creole seasoning ⅛ tsp pepper 2c sharp cheddar cheese, shredded 1c pepper jack or Monterrey jack cheese, shredded Butter for baking dish How to make tater tot breakfast casserole 1. Butter a 9x13 baking dish and line the tater tots in the prepared baking dish, set aside.Add olive oil to a large skillet over medium heat. Cook the onion until slightly soft, about 3 minutes. 2. Add the breakfast sausage and cook, breaking up the sausage with a spoon, until nice and brown, about 8 to 10 minutes. Set aside to cool slightly. Sprinkle over the top of the tater tots. 3. In a large bowl whisk together the eggs, Carnation Evaporated Milk, salt, pepper, and creole seasoning. Add half of the shredded cheese to the egg mixture and pour over the top of the tater tots and sausage. Sprinkle the top with the remaining cheese. Cover with foil and place in the fridge overnight. 4. Preheat the oven to 350 degrees. Bake covered for about 25 minutes. Remove the foil and bake until the cheese is melty and the casserole is cooked through about another 20-25 minutes. Allow the casserole to cool for 5 minutes before slicing and serving with other brunch favorites!
