Cheesy Chicken Taco Mac is an easy one pan dinner!  INGREDIENTS  1 lb of chicken breast, cut into cubes  1 tbsp oil  1 onion, chopped 1/2 tsp salt and pepper  2 tsp chili powder 1 tsp each of cumin and dried cilantro  1 1/2 cups of chicken broth  2 1/2 cups of elbow macaroni  10 oz can of Rotel (not drained)  8 oz can tomato sauce  1 tbsp minced garlic  2 cups of shredded Colby Jack cheese  1/2 cup of milk  Fresh cilantro  INSTRUCTIONS  Heat a large skillet over medium-heat. Add 1 tbsp of oil, the chicken, and a chopped onion.  Season with salt, pepper, chili powder, cumin, and dried cilantro.  Once the chicken is pretty much cooked through, add the minced garlic, elbow macaroni, chicken broth, Rotel, and a can of tomato sauce.  Stir everything together well and bring to a quick boil.  Once you see bubbles, turn the heat down to medium low. Cover with a lid and cook for about 12 minutes or until the pasta is cooked. Stir at least once about half way through to keep the pasta from sticking to the skillet.  Finally, add the shredded cheese and milk, stir, and let sit until the cheese is melted. Crockpot Creamy Chicken and Noodles is easy to make and kid approved!  INGREDIENTS   1 lb chicken breasts  1/2 tsp each of salt, pepper, oregano, and thyme  1 tsp each of paprika, onion powder, garlic powder  1 tbsp minced garlic  1 cup chopped carrots  1 cup chopped celery  1 small diced onion  10 oz can cream of chicken soup 1 cup chicken broth  8-10 oz of medium egg noodles  1/2 cup heavy cream INSTRUCTIONS  Chop an onion, 1 cup of celery, and 1 cup of carrots. Be sure not to cut the carrots too thick. Set aside.  Spray a crockpot with cooking spray and add 1 lb of chicken breasts. Season with salt, pepper, oregano, thyme, paprika, garlic powder, and onion powder. Add 1 tbsp of minced garlic.  Next, add the chopped onions, carrots, and celery. Pour in one can of cream of chicken soup and 1 cup of chicken broth. Stir everything together. Cover and cook on low for about 6 hours.  Once the chicken is fully cooked and the carrots have softened, boil 8-10 oz of medium egg noodles following the directions on the package. Drain egg noodles well once cooked.  Remove the chicken and cut it up into small cubes or shred it with two forks. Add the chicken back to the crockpot and stir well. Add the cooked egg noodles and about 1/2 cup of heavy cream. Recipe for my favorite Caesar salad dressing 🥗: Ingredients: • 2 large egg yolks (feel free to sub for 2 tablespoons mayonnaise if you’re concerned about raw eggs) • 1 clove garlic, finely minced or grated • 4 anchovy fillets (or 2 teaspoons anchovy paste) • 2 teaspoons Dijon mustard (be careful with low quality Dijon, it can have a strong taste) • 1 tsp honey (add more if needed but this is optional, not traditional) • 1 tablespoon fresh lemon juice • 1 teaspoon Worcestershire sauce • 1/4 teaspoon salt (adjust to taste) • 1/4 teaspoon freshly ground black pepper • 1/2 cup olive oil (LIGHT, not extra virgin for a neutral flavor or sub for avocado oil if you have to) the other ingredients are strong which is why you need a light olive oil  • 1/4 cup FRESH grated Parmesan cheese - romaine lettuce - I made some sourdough croutons - shaved parm on top! White Chicken Enchiladas are an easy and delicious dinner!  INGREDIENTS 1 lb chicken, cooked & shredded  1/2 tsp each salt and pepper 1 tsp each cumin, garlic powder, and dried cilantro  2 tsp chili powder  2 cups Chihuahua Cheese  Fajita size flour tortillas (I used 11)  3 tbsp butter 3 tbsp flour  2 cups chicken broth 1 cup sour cream  4 oz green chiles Cilantro for topping  INSTRUCTIONS  In a large bowl, combine 1 lb of cooked and shredded chicken and 1 cup of shredded Chihuahua cheese. Season with salt, pepper, cumin, garlic powder, dried cilantro, and chili powder. Stir together well to make sure the seasoning gets well incorporated with the chicken.  Place a spoonful of the chicken mixture into a fajita size flour tortilla and roll it up tight. Place enchiladas in a greased 9X13 baking dish. I used 11 fajita size flour tortillas. Once all tortillas are in the baking dish, it’s time to make the sauce.  Over medium heat, melt 3 tbsp of butter in a large skillet. Add 3 tbsp of flour and let cook for about 1 minute stirring constantly. Add 2 cups of chicken broth and stir until the mixture thickens.  Remove the pan from the heat and add about 1 cup of sour cream and 1 small can of green Chiles (not drained). Stir well. Pour the white sauce over the enchiladas and top the enchiladas with about 1 more cup of shredded cheese.  Bake in the oven uncovered at 375 degrees for 20-25 minutes. You can also broil the enchiladas at the end for just a minute or two. Top with fresh cilantro and serve! Enjoy! This BBQ Chicken Potato Skillet is an easy kid approved weeknight dinner recipe!  Recipe 2 chicken breasts 5 small/medium potatoes olive oil + salt, pepper, garlic powder, and paprika (for potatoes) 1/2 tsp each of salt and pepper 1 tsp each of paprika and ranch seasoning 2 TBSP butter  1 TBSP minced garlic  1/2 cup of BBQ sauce  1 cup of shredded mozzarella cheese (any cheese is good in this)  Steps  •peel, wash potatoes, and cut up into cubes •toss with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part)  •cook potatoes in the air fryer at 400 degrees for about 20 minutes shaking them around at least a couple times while they cook •once potatoes are cooking, cut chicken into cubes •cook chicken in a skillet on medium high heat with a little butter  •season chicken with 1/2 tsp each of salt and pepper, 1 tsp each of paprika and ranch seasoning  •once chicken is finished cooking add the minced garlic and about 1/2 cup of BBQ sauce •add cooked potatoes to the skillet and stir everything together •top with shredded cheese •broil in the oven for just a few minutes to melt the cheese (you could also cover with a lid and let this sit on the stove until cheese melts)  Enjoy!  #dinner #Recipe #mealideas #dinnerrecipes #chickenrecipe #potatoes #easymeals

Chicken Cheese and Rice is a family favorite and only takes about 30 minutes to make!  INGREDIENTS 1 lb chicken 2 TBSP butter  1/2 tsp each of salt and pepper  1/4 tsp cayenne 1 tsp each of cumin, dried cilantro, and chili powder  1 TBSP of minced garlic  10 oz can of Rotel   8 oz can of tomato sauce  1 1/2 cups of chicken broth  1 cup of long grain white rice (uncooked & rinsed)  1 tbsp olive oil  White Queso Cheese Dip (I like Pancho’s brand from Sam’s Club)  Flour tortillas  Pico de gallo  Fresh cilantro  INSTRUCTIONS  Cut chicken into small pieces and cook in a skillet on medium-high heat with butter. Season with salt, pepper, cayenne, cumin, dried cilantro, black pepper, and chili powder (you could use a taco seasoning packet instead of this seasoning blend if you prefer).  Let that cook until chicken is cooked through. Move the chicken to the edges of the skillet and pour about 1 tbsp of olive oil into the skillet.  Add uncooked, rinsed rice and stir around for a couple of minutes.  Add Rotel, tomato sauce, minced garlic, and chicken broth. Stir well, cover with a lid, and cook on medium-low heat for about 15-20 minutes or until rice is cooked (I stirred it once about half way through).  Microwave queso and pour some over the chicken and rice. Top with fresh cilantro.  Serve as is or in tortillas with fresh pico de gallo. INGREDIENTS  3 large potatoes olive oil + salt, pepper, garlic powder (for potatoes)  1 lb ground beef  1/2 tsp each of salt and pepper 2 tsp of chili powder  1 tsp each of cumin, dried cilantro, and paprika  1/2 cup of water  1 tbsp minced garlic  Nacho cheese Burrito size flour tortillas Taco sauce  INSTRUCTIONS  Peel, wash, and cut up potatoes into small cubes. Toss them with olive oil, salt, pepper, paprika, and garlic powder in a large bowl (I don’t use exact measurements for this part).  Cook the potatoes in the air fryer at 400 degrees for about 25 minutes shaking them around at least a couple times while they cook.  Once the potatoes are cooking add 2 lb of ground beef to a large skillet over medium-high heat. Season with salt, pepper, chili powder, cumin, dried cilantro, and paprika (you could also just use a taco seasoning packet instead of these seasonings). Drain any extra grease if needed once the beef is fully cooked. Add about 1/2 cup of water and stir.  The ground beef can stay in the skillet on low heat until the potatoes are crispy.  Lay out a large tortilla and add some nacho cheese, a scoop of the ground beef, some taco sauce, a scoop of the crispy potatoes, and top it with a little bit more nacho cheese. Roll the burrito up. Parmesan Garlic Chicken Pizza is easy to make and so good!  INGREDIENTS 1 lb chicken breast  1 tbsp olive oil  1/2 tsp each salt and pepper 1 tsp each paprika and garlic powder  2 (6.5 oz) packs of pizza crust + ingredients needed for pizza crust  1 cup Alfredo sauce  Buffalo Wild Wings Parmesan Garlic sauce  8 oz shredded mozzarella cheese  4 pieces of bacon, cooked & chopped  Dried parsley  INSTRUCTIONS  Cut chicken breast into small cubes. Heat a large skillet over medium-high heat. Add 1 tbsp of olive oil and the cubes of chicken. Season with salt, pepper, paprika, and garlic powder.  While the chicken is cooking, mix up the pizza crust following the directions on the package. Spray a sheet pan with cooking spray and spread the dough out over the sheet pan. Poke holes in the crust and bake the crust at 475 degrees F for 5-10 minutes.  Once the chicken is fully cooked, remove it from the heat and add a little bit of the Parmesan Garlic sauce. I add just enough to coat the chicken.  Top the pizza crust with some Alfredo sauce. Add a little bit of mozzarella cheese, the chicken, and add more mozzarella cheese. Top with some chopped up bacon. Bake in the oven at 475 degrees F for about 10 minutes or until the cheese is melted how you like it. Top the pizza with dried parsley.
