Ingredients: • 3/4 cup all-purpose flour • 1 cup sugar • 2 1/2 cups water • 1 cup ghee (or 1/2 cup ghee + 1/2 cup butter or oil) • Cardamom (to taste) • Cinnamon (to taste) • Bay leaf (1 or 2) • 1/4 cup raisins and cashews Instructions: 1. Prepare the nuts and raisins: In a pan, lightly sauté the raisins and cashews until they’re golden and aromatic. Set them aside for later. 2. Make the sugar syrup: In another pan, combine water, sugar, cardamom, cinnamon, and bay leaf. Bring it to a simmer on medium heat and cook for about 15 minutes, allowing the syrup to thicken slightly. 3. Roast the flour: In a separate pan, dry roast the flour for about 5 minutes or until it becomes slightly browned and aromatic. 4. Cook the flour mixture: Add ghee (or the combination of ghee and butter/oil) to the roasted flour. Cook it for a few minutes, stirring constantly, until it turns brown. 5. Combine with syrup: Gradually add the sugar syrup to the flour mixture by ladles, stirring continuously to prevent lumps. Keep stirring until the mixture thickens and becomes smooth. If necessary, add more syrup to achieve your desired consistency. 6. Finish and garnish: Once the mixture has thickened, add the sautéed raisins and cashews. Stir everything together to incorporate. 7. Serve: Once fully cooked and well-mixed, you can serve it warm. This dessert is delicious and comforting, with the perfect balance of sweetness and warmth from the spices. Enjoy!
