I NEED to cook more, and it’s a great way to explore and share Georgian culture together! 🫶🥰🥹🇬🇪  CHIKHIRTMA // Gluten and Dairy Free ❤️ (serves 6) Ingredients: 	•	1 3-pound chicken, including all giblets except for the liver 	•	1 large onion, peeled 	•	2 garlic cloves, peeled 	•	½ teaspoon whole black peppercorns 	•	4 sprigs cilantro 	•	6 cups cold water 	•	2 tablespoons VEGAN BUTTER (or butter) 	•	2 onions, peeled and finely chopped 	•	1 tablespoon gluten free flour 	•	½ teaspoon powdered saffron 	•	Generous ½ teaspoon ground cinnamon 	•	½ teaspoon ground coriander seed 	•	¼ teaspoon salt 	•	Freshly ground black pepper 	•	2 eggs 	•	¼ cup freshly squeezed lemon juice 	•	Minced cilantro, basil, or dill for garnish Steps: 	1.	Prepare the Broth: In a large stockpot, bring the chicken, onion, garlic, peppercorns, and cilantro to a boil in cold water, skimming any foam that rises to the surface. 	•	Reduce heat and simmer the broth for 2½ hours, or until richly flavored. •	Strain the broth and reserve. Remove the chicken meat from the bones and set aside for other uses. 2.	Cook the Onions: •	In a deep pot, melt the butter and sauté the chopped onion until golden. •	Sprinkle the flour over the onion and cook for 1 minute. •	Add the saffron, cinnamon, coriander, salt, and pepper, stirring well. 3.	Finish the Soup: •	Slowly pour in the reserved chicken stock, stirring constantly. •	In a bowl, beat the eggs and stir in the lemon juice. •	Slowly stir about 2 cups of the hot broth into the egg mixture to temper it, stirring constantly. •	Pour the egg mixture back into the soup and continue stirring gently for 1 minute over very low heat to thicken slightly. Do not allow the soup to boil. 	4.	Serve: Garnish with minced cilantro, basil, or dill, and serve hot. Even as I type this, the protests continue in Georgia, and I support them completely!
