30-MIN MEALS EP 2: STICKY TOFU W/ PEANUT-LIME CUCUMBER SALAD 🔥  We’re back with another delicious 30-minute meal. The sticky tofu is sweet and garlicky. The cucumber salad is like a flavor explosion with all the different herbs and aromatics like mint, chili, and cilantro. The combo of the rich tofu and bright crunchy salad pair perfectly with the rice. You could even serve some of the leftover peanut sauce on the side for dipping the tofu. I’m head over heels for this one. Hope y’all enjoy 🙏  Full recipe below ingredients 4 to 6 persian cucumbers, peeled and thinly oblique sliced 4 scallions, thinly oblique sliced 1 handful cilantro leaves and stems, roughly chopped 12 to 16 mint leaves, roughly chopped 1 fresno chili, seeded and finely diced 1 cup peanut butter 4 limes, juiced 5 cloves garlic, grated 6 tablespoons soy sauce at least 1/2 cup warm water (see below) 1 block firm tofu, pressed oil, salt, & pepper (as specified) 1/4 cup maple syrup 1 two-inch piece fresh ginger, grated cooked white rice black & white sesame seeds preparation add cucumbers to a large bowl with scallion, cilantro, mint, and chili. set aside. add peanut butter, lime juice, 3 grated garlic cloves, and 4 tbsp soy sauce to another mixing bowl or jar with a lid. whisk or shake together. add 1/2 cup hot water and mix in. add more hot water if necessary to thin out the dressing. pour dressing over cucumbers and mix everything until well combined. set aside. cut the tofu block in half to make two flat, wide pieces, then cut each piece on an angle to make triangles. score each piece horizontally and vertically across the top. heat oil in a saute pan over medium high heat 2 mins. add a pinch of salt and black pepper to the oil. lay in your tofu pieces and sear 5 to 6 mins. while the tofu sears, combine the maple syrup with remaining 2 tbsp soy sauce and 2 cloves grated garlic, along with the grated ginger. whisk together. flip tofu pieces over to reveal scored side that has been seared. brush the pieces with the glaze to your liking. cook 2 mins, flip over, cook another 2 mins, then flip back and brush with more glaze (keep cooking the tofu until it glazes to your liking). serve w/ cucumber salad & rice. dig in, and enjoy 🙌 #veganrecipes #veganuary #tofurecipes

NOT “CHICKEN” NUGGETS INGREDIENTS For nuggets: 1 can young green jackfruit 1 can chickpeas (keep chickpea water) 1/2 black of pumpkin seed tofu (or extra firm tofu) 3 tsp salt and pepper  1 tsp smoked paprika  1 tsp paprika 1 tsp onion powder 1 tsp garlic powder  1/4 cup aquafaba  1/2 cup chickpea flour For dredges: Drained chickpea water for wet dredge 1 cup chickpea flour 3 tsp salt and pepper  1 tsp smoked paprika  1 tsp paprika 1 tsp onion powder 1 tsp garlic powder  INSTRUCTIONS Drain and rinse your jackfruit, then squeeze out as much liquid from them as possible with a clean kitchen towel. Tear into shreds and roast at 350ºF for 15 mins with a drizzle of oil, salt and pepper. Drain and rinse your chickpeas but keep the liquid that comes int he can (aquafaba). Mash chickpeas in a large mixing bowl then add roasted jackfruit, pumpkin seed tofu, spices, aquafaba, and flour. Mix until well combined then form your nuggets, lay on a tray and freeze for 30 mins. Then coat in seasoned flour, aquafaba then back in the flour to fully dredge. Fry on medium heat for 3-5 mins total or until golden and crispy.
