Loaded Broccoli Cheese Potato Boats!🥦🧀🥔 Had to make this after seeing this video pop up on my Pinterest from @Royale Eats So easy to make, family-friendly, and deliciously comforting on a cold winter night! Ingredients: * 4 Large Russet Potatoes
* 2 Tablespoons Olive Oil
* Salt, for baking potato
* ½ Pound Steamed Broccoli
* ½ Cup Unsalted Butter (melted)
* 1 Teaspoon Salt
* 1 Teaspoon Black Pepper
* 1 Teaspoon Garlic Powder
* ½ Cup Heavy Cream
* ¼ Cup Sour Cream
* 8 oz Sharp Cheddar Cheese(divided)
* 8 oz Colby Jack Cheese(divided)
* ¼ Cup Chives
* Smoked Paprika
1. Clean and dry potatoes. Coat with olive oil and salt. Bake at 350 for 1 hour to 1.5 hours. 2. Slice a thin top layer off each potato, scoop out insides and add to a bowl. 3. With the potatoes in the bowl, add butter, cheese, heavy cream, sour cream, broccoli, chives, salt, pepper, and garlic powder. 4. Refill the potatoes with this mixture. Top each one with remaining cheese. Sprinkle on paprika. 5. Bake at 375 for 15-20 minutes.
