It took me all this time to work out that the secret to a tender meatball is sliced bread soaked in milk. Super fast and easy iftar - just the way I like it haha. INGREDIENTS: - 1kg beef or lamb mince (I used lean beef from @The Meat Cartel ) - 1 potato (optional) peeled and grated - 2 slices bread soaked in 1/2 cup of milk - 1 onion, blended - 6-8 cloves garlic, blended with the onion - 1 packet Shan seekh kebab masala, less if you don’t like it too spicy - 1/2 teaspoon bicarb soda - Chopped coriander as much as preferred - Oil for frying METHOD: - Combine all ingredients, refrigerate for 2+ hours (we want that bicarb & onion juice to tenderise the meat) - Wet your hands and roll into balls, whatever size - Heat your oil over lower medium heat, enough to shallow fry - Fry the meatballs, don’t rush this…if you flip them too soon they could break! - Fry for about 15 mins, flipping once halfway If your meatballs are smaller than mine then fry for 7-10 mins. It’ll warm you up from the inside and some of these ingredients will help to boost your immunity making it the perfect hearty sick persons soup. It’s antiviral, anti inflammatory, antibacterial, naturally detoxifying, immunity boosting - just to name a few! YOU NEED: - 2 cups plain flour - 1.5 cups cornflour - 1 heaped tablespoon each: paprika, onion powder, garlic powder, lemon pepper, cajun, salt - 2 teaspoons black pepper - 600ml refrigerated soda water (cold is key to the crisp) - 1.5kg white flaky fish fillets (I used basa because it tastes the least like the ocean 😂) - Oil for deep frying HOW: - Combine the flour, cornflour, and all seasonings; ensure it’s mixed well - Reserve 1 cup of this seasoned flour - Slowly whisk in the soda water until you achieve a smooth, lump free batter - Coat your fish in the dry seasoned flour, then into your batter and straight into hot oil - Deep fry for 3-4 mins each side over a medium heat - Serve with chips, salad, lemon wedges and tartar sauce to make this the complete classic #batteredfish #crispy #fakeaway

A post by @mumlife_edition on TikTok caption: Eggless Rasmalai Tres Leches (3 milk cake) INGREDIENTS: - 1 box butter cake mix - 350ml soda water - 1 can condensed milk - Full cream milk (measured in the condensed milk can) - 1 can evaporated milk - 1 bag Mimo’s spice bag (original blend) - 1/2 teaspoon ground cardamom - 600ml thickened cream - 1 teaspoon ground cardamom - Rose petals & crushed pistachios to garnish HOW: - Whisk together the cake mix and soda water until smooth and airy - Bake it as per box instructions, I always lightly oil spray my dish first - In a large non stick pan add the milks - Remove the bay leaf from the spice bag and add 1/2 teaspoon cardamom then tie the bag up again - Add the spice bag to the milks and heat the whole thing until it’s almost at a boil - Discard the spice bag and pour half the milks mixture over the cake, let it soak up - Reserve remaining half to drizzle around the cake slices when serving - Whip the thickened cream with remaining cardamom and top the cake - Refrigerate overnight and garnish Best served chilled ❄️ #rasmalai #rasmalaicake #tresleches #diwalirecipe #egglesscake

A post by @mumlife_edition on TikTok caption: One pan masala baked beans & eggs feat. @Cosmic Cookware Australia  INGREDIENTS: - 1 tablespoon ghee - 1/2 teaspoon cumin seeds - 1 red onion, finely diced (save a tiny bit for garnish) - Sliced chilli to taste (I used jalapeño) - 1/4 teaspoon turmeric - 1 teaspoon garam masala - 3 jumbo free range eggs - Coriander for garnish - Choice of sourdough/hash brown/paratha METHOD: - Heat ghee over lower med heat and add cumin seeds, toast for 30 seconds - Add onions & cook until they start going see though, then add the chilli, turmeric and masala - Cook until fragrant then add the baked beans - Give this a good stir and crack the eggs in - Cover and let this cook (length depends on how long well done you like your eggs) - Garnish and serve with choice of bread, hash brown or paratha We had this with sourdough that we buttered and seared golden on each side. I know this is a Mother’s Day breakfast but you need to know that my husband who would never go near a baked bean ate a whole serve of this!
