borani banjan โ eggplant layered with garlic yogurt and a rich tomato sauce, and honestly the best eggplant dish to exist ๐ฆ๐ซ๐ซถ๐ป ingredients: 3 eggplants, sliced olive oil 6 cloves garlic, minced (divided) 1 tsp turmeric 1 tsp black pepper 2 large tomatoes, diced 1 tbsp tomato paste 1 ยฝ cups water 1 ยฝ cups plain yogurt fresh cilantro, for garnish instructions: 1. salt the eggplant slices and let sit for 30 minutes. pat dry and wipe off as much water and salt as possible. 2. heat oil in a pan and fry eggplant until golden. set aside. 3. in the same pan, sautรฉ half of the garlic for 30 seconds. stir in turmeric, black pepper, tomatoes, and tomato paste. add water and simmer for 5-7 minutes. 4. layer eggplant into the sauce, cover, and simmer for 15-20 minutes. 5. mix yogurt with the remaining garlic and a pinch of salt. 6. layer the eggplant with yogurt sauce on top. garnish with cilantro or mint. serve warm or at room temp with naan or rice. nosh e jan!
