Strawberry crumb cake🍓🍰✨ Recipe: Ingredients Crumble topping -6 Tbsp unsalted butter, cold and diced (85g) -1 cup all-purpose flour (120g) -3/4 cup light brown sugar, packed (160g) -2 tsp cinnamon -pinch of salt Strawberry jam -2 cups strawberries, sliced (340g) -1/4 cup granulated sugar (50g) -2 tsp lemon juice -1/2 Tbsp cornstarch + 1 Tbsp water Cake -2 cups all-purpose flour (240g) -2 tsp baking powder -1/2 tsp salt -10 Tbsp unsalted butter, softened (141g) -3/4 cup granulated sugar (148g) -1/4 cup light brown sugar, packed (53g) -2 eggs, room temperature -2 tsp vanilla -1/2 cup sour cream, room temperature (120g) -1 Tbsp milk Instructions For the crumble: 1. Whisk together flour, light brown sugar, cinnamon, and a pinch of salt. 2. Add the cold butter and work the butter into the flour mixture with your fingers until a crumbly mixture has formed. Place in the fridge meanwhile. For the strawberry jam: 1. Combine 1 Tbsp of water and 1/2 Tbsp cornstarch in a small dish and set aside. 2. In a medium saucepan bring sugar, strawberries, and lemon juice to a boil. Reduce heat and simmer for about 10 minutes, stirring occasionally. While simmering smash the strawberries really well. 3. Add water+starch mixture and mix to combine for about 2 minutes. Turn off heat and set aside to cool. For the cake: 1. Preheat oven to 350°F. Grease a 9-inch springform pan and line the bottom. 2. In a medium bowl whisk together the flour, baking powder, and salt. Set aside. 3. In a large bowl add the butter, granulated sugar, and light brown sugar. Beat for a couple minutes until light and fluffy. 4. Add the eggs and mix until combined. 5. Add the sour cream and vanilla and mix until combined. 6. Add the dry ingredients to the wet ingredients and mix until just combined. Then add the 1 Tbsp milk and mix until just combined. Be careful to not over-mix. 7. Add the batter to the greased pan and spread it out evenly. Add the strawberry jam all over and sprinkle the crumble on top. 8. Bake for 45-55 minutes. Let it cool for at least 30 minutes. Run a knife on the edge of the pan and sprinkle some powdered sugar on top before serving.
