Spare ribs can be easy and delicious without all the fluff stuff that you see on the internet. This is my simple, straightforward recipe for ribs, no matter what smoker I am running. Season simply: This is my homemade SPOG blend with no sugar. You can use whatever your favorite rub is. With patience and good smoke, you don't need sugar or a binder to get a great bark. Temperature: My smoker is typically going to run between 250-275 whenever I do ribs. I prefer this temperature as opposed to 225. The fat renders better, and I'm not outside forever cooking ribs like it's a brisket. Skip the 3-2-1 Method: 6 hours for ribs is plain criminal. Running these ribs at the temp I do, my spare ribs take anywhere between 4-4½ hrs depending on thickness. Once they can bend over my hand, they are typically done. Do that just before they start to break apart if you want to bite through tender. My favorite smoker for ribs: The Bronco drum smoker is my favorite for ribs but I can cook the ribs this way on any grill. The Bronco gives me the unique ability to hang the meat over the fire and allow it to soak up all that delicious clean smoke we seek. On the Bronco, I don't like to let the ribs hang for longer than 2½ hrs or you run the risk of your tender ribs falling in the fire. Ask me how I know 🤣🤣. Wrap or not: That's for you to decide. Recently, about the last year and a half, I have gotten to like ribs unwrapped. I get a more sold exterior and tender inside which pleases my palate.
