This Mediterranean Bean Salad is a flavorful & filling lunch prep that requires no cooking and comes together in 20 minutes! 🥒🫘✨ I love all the flavors in this salad and you can easily swap out your favorite veggies! Pair with your favorite protein like an easy slow cooked pulled chicken 😊 Ingredients: -1 c of diced cucumber -1/2 of red onion finely chopped -1/3 c diced fresh bell pepper -1/4 c diced roasted red pepper -1/3 c diced olives -handful of parsley finely chopped -14 oz can of cannellini beans -14 oz can of red kidney beans for dressing: -2 tbsp olive oil -1 tbsp red wine vinegar -1 tsp dijon mustard -1/2 tsp Italian seasoning -1/2 tsp garlic powder -salt & pepper optional: -two large chicken breast -broth -garlic powder -salt & pepper -1 bay leaf Steps: 1. Combine veggies, parsley, and beans in a bowl. 2. In a small dish, combine dressing ingredients and mix well 3. Drizzle dressing over ingredients in bowl and mix evenly 4. Divide into four containers Optional: 1. Slow cook seasoned with garlic powder, salt & pepper in broth with a bay leaf for 2.5-3 hours on high until easily shredded 2.
