Ingredients • 3 lbs Chuck Roast • 1 tsp salt • 1/2 tsp black pepper • 1 medium onion, diced • 1 tbsp avocado oil Marinade/Sauce • 1/2 cup orange juice • 2 tbsp lime or lemon juice • 2 tbsp avocado oil • 3 cloves garlic, minced • 1 tbsp apple cider vinegar • 2 tsp chili powder • 2 tsp cumin powder • 1 tsp paprika • 1 tsp dry oregano • 1 tsp onion powder • 2 tsp salt • 1/2 tsp ground black pepper Toppings • Warm corn tortillas • Diced onion • Chopped cilantro • Salsa (your choice) • Optional toppings: sour cream, avocado slices, shredded cheese, or jalapeños Instructions 1. Preheat the oven: Set your oven to 325°F. 2. Season the beef: Pat the chuck roast dry with paper towels. Season with 1 tsp salt and 1/2 tsp black pepper on all sides. 3. Sear the beef: In a large oven safe pan with a lid, sear the seasoned beef, 3-4 minutes per side. Remove the beef from the pan and add diced onion to the bottom. Place the chuck roast on top of the onions. 4. Prepare the sauce: Mix all marinade/sauce ingredients in a bowl. Spread half the marinade/sauce one side of the beef, flip to the other and spread the rest. Cover the pan with the lid and roast in the oven for 3 hours. 5. Shred the beef: Once cooked, remove the beef from the oven and shred using two forks. 6. Crisp the beef: Broil on high for 5-7 minutes until the edges are crispy. OR for an even crisping, transfer the shredded beef to a baking dish and spread evenly. Broil for 5-7 minutes, watching closely, until the edges are crispy. 7.
