HIGHER IN PROTEIN BANANA BLUEBERRY MUFFINS If you have some ripe bananas that need to be used up, make these higher in protein banana blueberry muffins. A perfect grab-and-go breakfast or snack idea for your week. Makes 12 muffins: 3 large eggs 2 ripe bananas 1 tsp vanilla extract 1/4 cup melted refined coconut oil 1/4 cup maple syrup 1 cup whole milk cottage cheese 1 1/4 cup gluten free all purpose flour 1 tsp baking soda 1 tsp cinnamon 1/2 tsp nutmeg 1/2 tsp salt 1 cup blueberries coated in flour Instructions: 1. Preheat oven to 350 F 2. Blend all the wet ingredients in a food processor or high powered blender until smooth 3. Add the dry ingredients and mix with a spoon 4. Coat your blueberries in some extra flour 5. Fold in your blueberries 6. Add to lined muffin tin 7. Optional: top with a few more blueberries on top 8. Bake for 15-17 minutes or until toothpick comes out clean 9.
