Arroz Frito was always my mom’s tradition on New Year’s Eve. This is not your traditional fried rice, but it’s like the one you would get from Canton in Hialeah with a side of plantains of course. Happy new year! 6 cups of long grain rice, cooked the day before, no salt and no oil 2 skinless boneless chicken breast, diced 8 ounces of cooked boneless ham, cut in 1/2 in cubes 8 ounces bacon, diced 1/2 in 1 1/2 pound of shrimp, peeled and deveined, no tails 15 oz frozen peas and carrots, thawed 6 eggs, beaten 8 oz bean sprouts 1 cup green onions, sliced 1/4, green only Soy sauce 1. On a flat top griddle or large cardero, add vegetable oil on medium heat and cook chicken until done and set aside. Same with ham, shrimp, and bacon. Discard bacon grease after cooking. Add eggs and scramble. Add your rice and add all of the cooked protein and continuously mix everything together. Add carrots, peas, bean sprouts, and gradually add your soy sauce until it’s to your liking. Once everything is added, add green onions and continue to mix until everything is incorporated. Serve immediately
