Chicken Parmesan Meatballs Makes 15 meatballs Ingredients: 1 lb ground chicken (substitute any type of ground meat) 1/4 cup fresh basil + 1 Tbsp for garnish 1/4 cup Italian Nut Crumbs (substitute: panko, regular bread crumbs, crushed chips or crackers) 1/3 cup grated parmesan cheese + 1 Tbsp for garnish (I used grated parmigiano reggiano) 1 tsp Italian seasoning 2 garlic cloves minced 1/4 tsp salt 1/4 tsp ground pepper 1 large egg 8 oz jar favorite tomato sauce 15 pearl mozzarella balls 1-2 Tbsp olive oil Instructions: 1. Preheat oven to 400 F 2. Add egg to a bowl and whisk 3. Add fresh basil, nut or bread crumbs, parmesan cheese, 2 Tbsp tomato sauce, Italian seasoning, salt, pepper, minced garlic, and mix 4. Add the ground chicken and mix with your hands or spoon 5. Form into 15 meatballs, add a mini mozzarella ball to the middle, and form to cover the cheese ball 6. Add 1/4 cup of tomato sauce to the bottom of a baking dish, and add the meatballs to baking dish, drizzle with 1 Tbsp of olive oil 7. Bake meatballs for 20 minutes 8. Once done flip the meatballs, pour the rest of the tomato sauce on top, and bake another 5-7 minutes 9. Top with fresh Basil and parmesan cheese 10.
