Ingredients 1/2 cup oat flour 2 scoops vanilla protein powder 1/2 cup nut or seed butter 1/2 cup apple sauce 1/2 cup unsalted butter 1 tbsp cinnamon 1 tsp baking powder 1 tsp vanilla extract Glaze 3/4 cup powdered sugar 2 tbsp milk Instructions Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with non-stick cooking spray. In a bowl, combine the oat flour, vanilla protein powder, cinnamon, and baking powder. Stir until well combined. In a separate bowl, mix together the nut or seed butter, unsweetened applesauce, melted unsalted butter, and vanilla extract. Stir until the mixture is smooth and well combined. Pour the wet ingredients into the bowl with the dry ingredients. Stir until the batter is thoroughly mixed and there are no dry pockets. Divide the batter equally among the prepared muffin cups, filling each one about three-quarters full. Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The muffins should be golden brown and slightly springy to the touch.
