Favorite way to use up coconut cream leftover from recipes!   you technically don’t have to refrigerate this recipe and can eat it right away, but I find refrigerating it makes it a bit thicker and more chocolatey , somehow!  - Scoop of coconut cream from the top of a can  - 2 tbsp cacao/ cocao powder - 1 tbsp sweetener of choice - dash of vanilla  Mix together and put in the fridge for one hour !  This can only be done with coconut milk or coconut cream from a can. Grease and line a 9x13-inch baking pan with parchment paper, leaving overhangs for easy removal. In a large bowl, whisk together the melted butter and sugar until smooth. Add the eggs, one at a time, whisking well after each addition. Stir in the vanilla and almond extracts. In a separate bowl, combine the flour, baking powder, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in the shredded coconut, lime zest, and lime juice until evenly distributed. Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow the bars to cool completely in the pan. While the bars cool, prepare the glaze by whisking together the powdered sugar and lime juice until smooth. Once the bars are cool, drizzle the glaze over the top and spread evenly. Garnish with lime zest for an extra pop of color and flavor. Allow the glaze to set before cutting the bars into squares or rectangles.
