Happy New Year! 🎊 I am back from vacation with a surprise! 😳 I am relaunching my popular Cookin’ in Rice Cooker series which I know so many of you love! The past few months I have been remastering my old recipes and testing new ones, so I hope you’ll follow along! ❤️  For those of you who may be new, the series was born out of my experiences as a low income student in college who missed Vietnamese food (Asian food in general tbh). Most of the dorms I lived in didn’t have kitchens, but at the time we were allowed to have rice cookers! 🍲 EP 4. Hot Pot for one..or two! This one isn’t a recipe since I use a hot pot soup base! Just pick out your favorite hot pot soup base and mix together your got to sauce! 🍲   I do recommend flipping between cook to warm once the soup boils. This way you don’t overheat the rice cooker quickly. For example, if I were to just leave the switch on cook after the soup boils, it will switch to warm automatically at some point. The rice cooker detects its too hot. Afterwards, the pot has to cool down before you can switch it to cook again. EP 3. Miso Soup! Freshman year I kept a bunch of instant miso soup packets in my desk, and I would use a coffee maker to boil water and make soup haha. Then when I started experimenting with cooking in my rice cooker..I realized I could easily make miso soup with fresh ingredients instead! The instant stuff is super handy though and tastes great : )  Ingredients 2 cups water 1/2 tsp dashi powder 1/2 tbsp wakame seaweed 5 oz soft tofu, cubed 1-2 tbsp miso paste (start out with 1 and add more to preference) 1. Place water, dashi powder, seaweed, and tofu into the pot. Place the lid on top and hit cook. 2. Once the soup comes up to a boil, flip the switch to warm. We do this because high temperatures can not only affect the taste of miso negatively but also affect the nutritional benefits! 3. Dissolve the miso paste carefully using a strainer. 4. It snowed today, so it was the perfect weather for mille feuille nabe. 🥬 Ingredients 1/4 head of Napa cabbage Thinly sliced pork belly 1 cup water 1/4 tsp dashi powder 2 tbsp soy sauce 1 tbsp sake 1/2 tbsp mirin 1. Layer thinly sliced pork belly between the Napa cabbage leaves 2. Cut the layered cabbage and pork into smaller pieces 3. Place the layers in the rice cooker pot 4. Combine the water, dashi powder, soy sauce, sake, and mirin. Add to the rice cooker 5. Place the lid on top and hit cook. 6. Serve with your favorite dipping sauce. EP 2. Chinese Sausage Rice. Growing up, my mom would toss Chinese sausage and some veggies into the rice cooker for a quick yet yummy meal. This is a classic rice cooker hack for many Asian families! As usual the water to rice ratio may differ depending on the kind of rice you use! Cooking times may also differ depending on your rice cooker brand/model. Ingredients 3/4 cup jasmine rice 1 cup + 2 tbsp warm water 4-5 dried shiitake mushrooms 1 Chinese sausage link 1/2 cup frozen peas and carrots 1 tbsp soy sauce 1 tbsp oyster sauce 1/2 tbsp sesame oil 1/4 tsp mushroom seasoning powder 1. Soak dried shiitake mushrooms in the warm water. This is optional but it adds lots of umami flavor! If you decide not to do this, substitute with fresh mushrooms or a different vegetable 2. Squeeze shiitake mushrooms to remove any liquid, The remaining liquid will be our “dashi.”Add extra water to bring the amount of mushroom “dashi” to 1 cup + 2 tbsps 3. Slice the rehydrated shiitake mushrooms or fresh mushrooms if you skipped steps 1-2. 4. Wash rice and add the mushroom “dashi” or water if {again} the above steps were skipped to the rice 5. Slice the Chinese sausage.  6. Add the mushrooms, peas + carrots, and sausage on top of the rice. Do not stir. 7. Combine the soy sauce, oyster sauce, sesame oil, and mushroom seasoning powder. Poor onto of the ingredients. 8. Cook 9. EP 6. A good ole one pot salmon rice inspired by Emily Mariko’s viral salmon rice bowl! As usual the water to rice ratio may differ depending on the kind of rice you use! Cooking times may also differ depending on your rice cooker model.  My rice cooker is a 2 cups cooked / 4 cups uncooked size. Ingredients 3/4 c medium grain rice 3/4 c + 2 tbsp water 1 salmon fillet White Sesame Seeds Sriracha Kewpie Mayo Avocados Kimchi Seaweed 1. Wash and drain your rice  2. Add the 3/4 cups + 2 tbsp of water to the rice. Place the salmon fillet on top and let cook! 3. Add sriracha, mayo, and sesame seeds. Mix together 4.
