the last meal I made in my kitchen—a chicken noodle soup for my mom. a night filled with music, my favorite kitchen tools, and so much love. including the recipe below just in case you want some comfort food tonight 🤎 (if anyone ever finds a ganache le creuset, pls let me know… I have eBay alerts on lol) #chickennoodlesoup #comfortrecipe #healthyrecipes #cookingvlog  Ingredients * 1 tablespoon olive oil * 2 celery stalks, finely diced * 1 cup carrots, finely diced * 2 shallots, finely diced * Salt and pepper, to taste * Red pepper flakes, to taste * 1 teaspoon Italian seasoning * 1 tablespoon Better Than Bouillon paste (chicken or vegetable flavor) * 4 cups chicken broth * 1 ¼ pounds boneless, skinless chicken breasts * 6 ounces pasta (I used gluten-free from Jovial) * ¼ cup fresh dill or basil, chopped Instructions 1. Cook the vegetables: Heat olive oil in a large pot over medium-high heat. Add the diced celery, carrots, and shallots. Sauté for about 5 minutes until the vegetables are just tender. Season with salt, pepper, red pepper flakes, and Italian seasoning. 2. Add broth and bouillon: Stir in the Better Than Bouillon paste. Pour in the chicken broth and bring the mixture to a boil. 3. Cook the chicken: Lower the heat to a simmer and add the chicken breasts to the pot. Cover and let cook until the chicken is fully cooked, approximately 10 minutes. 4. Prepare the chicken: Use tongs to remove the chicken from the pot. Chop or shred it into bite-sized pieces. 5. Cook the pasta: Add the pasta to the pot and cook until tender, about 4 minutes. Taste and adjust seasoning with additional salt and pepper if needed. 6. Finish and serve: Stir the shredded chicken back into the pot. Serve warm with chopped basil or dill on top.
