Chicken noodle soup sounded good 🍜 recipe below 👇🏻 Ingredients: - 2 Chicken Breasts - 1/2 yellow onion (diced) - 3 stalks celery (diced) - 3 carrots (diced) - 3 cups diced potatoes - 2 tablespoons butter - 2 tablespoons olive oil - 1 tablespoon Italian seasoning - 1 teaspoon red pepper flakes - Salt & pepper to taste - 8 cloves garlic (minced) - 6 cups chicken broth - 1 bay leaf - 1/2-1 cup heavy cream - Juice of 1/2 lemon - 1/4 cups parsley - 1 tablespoon dill - 1/2 tablespoon rosemary - 1 tablespoon thyme - 1 lb egg noodles 1. Cook noodles 2. Heat 1 tablespoon olive oil & butter in a pot. Cook chicken breasts 3. Reduce heat to medium, add rest of oil & butter. Sauté onion, celery and carrot with salt, pepper, Italian seasoning and red pepper flakes for 6 minutes. 4. Add garlic, cook for 30 seconds then add chicken broth with salt and pepper. 5. Stir in diced potatoes, bouillon cube, and bay leaf. Return chicken to pot. 6. Bring to a boil then simmer for 15-20 minutes until potatoes are done. 7. Remove chicken, shred, set aside. 8. Remove bay leaf. 9. Stir in heavy cream, lemon juice, parsley, dill, rosemary and thyme. 10. Add chicken back, serve over noodles. 11. Top with Parmesan, red pepper flakes, parsley.
