This Lasagna Soup is one of my favorite one-pan meals—it’s ready in less than 30 minutes! Packed with hearty flavors, it’s a quick, comforting dish the whole family will love. I like to sneak in extra veggies, but feel free to customize it to your liking. Ingredients • 1 lb ground beef, cooked • 1 tbsp olive oil • ½ onion, finely diced • 1 red bell pepper, finely diced • 3 cloves garlic, minced • 1 tbsp Dan-O’s Italian Seasoning (or to taste) • 2 cups marinara sauce • 4 cups chicken broth • 4 cups cottage cheese • 6 oz (about 7 sheets) lasagna noodles, broken into bite-sized pieces • 1 bag (6 oz) baby spinach, roughly chopped Optional Toppings 1. • Fresh basil 2. • Parmesan cheese Instructions 1. Base In a heavy-bottomed pot, heat olive oil over medium heat. Sauté the onion and red bell pepper until softened, about 5 minutes. Add garlic and Dan-O’s Italian Seasoning, stirring until fragrant, about 2 minutes. 2. Meat and Sauce Stir in the cooked ground beef, marinara sauce, chicken broth, and cottage cheese. Bring to a gentle boil. 3. Pasta Add broken lasagna noodles to the pot. Cook according to the package directions or until al dente, about 6-8 minutes. 4. Spinach Stir in the chopped spinach and cook until wilted, about 3 minutes. 5. Serve Divide the soup into bowls and top each with shredded mozzarella cheese, fresh basil, and freshly grated Parmesan cheese.
