Sheet Pan Cottage Cheese Crust Pizza As someone who is trying to increase protein in my everyday meals, this one feels too good to be true. I’m not sure how eggs + cottage cheese = a pizza crust, but I’m telling you it works! If you don’t like cottage cheese, I realllllly don’t think you would even know it’s in this recipe. Listen, nothing will ever replace actual pizza, but this is a great “healthy” option if you’re looking to try a new recipe! Ingredients •1 C cottage cheese •1 egg + 1 egg white •kosher salt •1/4 C grated parm •1/2 C shredded mozzarella •red sauce (I like using passata) •other toppings •avocado oil spray Recipe 1. Preheat oven to 400 2. Blend your cottage cheese, eggs, parm & a pinch of salt until smooth 3. Line a baking sheet with parchment & make sure to spray with avocado oil 4. Evenly pour & spread the cottage cheese batter onto parchment in shape of rectangle 5. Bake for 15-20 min, until the edges start to turn brown 6. Remove from oven & let sit for a couple min. Carefully flip over. 7. Bake for about 7-10 min. *see notes 8. Let sit for a couple min, then flip again. Top with a light amount of sauce, then add cheese, & toppings. 9. Bake for about 5 min until cheese melts. I like to broil for last min but I watch it closely with oven light so it doesn’t burn! *Note: there’s a chance that it may bubble, if so, remove from oven & pierce with fork & place back in.
