Avoid using cold rice, as it’s harder to shape. Lightly wet your hands with water and sprinkle a pinch of salt on your palms to prevent sticking. Step 2: Shape the Onigiri Take about 1/3 to 1/2 cup of rice and shape it into a triangular or round ball by gently pressing the rice together. Repeat for the remaining rice. Step 3: Make the Soy Sauce Glaze In a small bowl, mix soy sauce and mirin (if using). Set aside. Step 4: Grill the Onigiri Heat a non-stick pan or grill over medium heat and add the neutral oil.
