cider chili for the weekend 🤘 i know i said fall even though its winter I did this voiceover months ago and didnt wanna redo it sorry CIDER STEAK CHILI WITH JALAPENO CHEDDAR CORNBREAD (serves 4) 2 Tbsp. oil 1 lb. skirt steak (or other steak of choice), cubed 1 lb. ground beef 1 Tbsp. chipotle chili powder 1 tsp. garlic powder 1 tsp. onion powder 1 tsp. paprika 1/2 tsp. cayenne pepper Salt and pepper, to taste 2 onion, chopped 2 Tbsp. tomato paste 1 bottle hard apple cider 1 can diced tomatoes with green chiles 1 can black beans 1 cup chicken broth 1 box corn muffin mix 1/3 cup milk 1 egg 1 jalapeno, minced 1/2 cup shredded cheddar cheese 4 Tbsp. melted butter Heat oil in a large pot over medium heat, add steak and ground beef plus seasonings and cook, stirring occasionally, until browned, about 12 minutes. Add onions and cook for another 5 minutes, until slightly softened, then add tomato paste and cook for another minute. Deglaze with apple cider; let simmer for 10 minutes. Add tomatoes, beans and chicken broth, cover and let cook for at least an hour (the longer the better.)  Preheat oven to 425F. In a large bowl, add all remaining ingredients and stir to combine. Transfer chili to oven safe bowls and top with corn muffin mix. Protein pumpkin muffins 🎃 🎃 1 Box Pumpkin bread or muffin mix ( I used the trader joes one) 🎃 1 Can pumpkin puree 🎃 2 tosp water (if needed for texture) 🎃 ½ cup chocolate chips 🎃 2 scoops vanilla protein powder 1. Preheat oven to 375 2. In a bowl mix together pumpkin bread mix, pumpkin puree, and vanilla protein powder 3. Add in extra water if it is not mixing well 4. Once mixed add in chocolate chips 5. Divide into 12 muffin tins 6. INGREDIENTS: Dough: - 1 cup warm milk - 2.5 tsp dry yeast - 4 tbsp brown sugar - ½ cup unsalted butter  - 2 large eggs - 3 cups all-purpose flour - ¾ tsp salt - 1 tsp of chai spice (See chai spice spices below) Filling: - 3 tbsp Chai Spice Mix:   - 1 tbsp ground cinnamon   - 1 tbsp ground ginger   - 1 tbsp ground cloves   - 1 tbsp ground cardamom   - 1 tbsp ground coriander   - 1 tsp ground star anise   - ½ tsp salt - ¾  cup salted butter (melted) - 1 ½  cups packed brown sugar Topping on unbaked rolls: - ½ cup heavy cream (pour over the unbaked risen rolls) CHAI GLAZE: - ½ cup cream cheese - 3 tbsp unsalted butter - 1 cup powdered sugar - 1 tsp vanilla extract - 3-4 tablespoons strongly brewed chai METHOD: - Preheat the oven to 350°F. - Start by adding warm milk and active yeast to a stand mixer and stir until yeast is mostly dissolved - Add the following to the mixer: 4 tbsp brown sugar, ½ cup unsalted butter, 2 large eggs, 3 cups all-purpose flour, 1 tsp chai spice mix, and ¾ tsp salt. - Knead the mixture in the mixer for 7-10 minutes until it forms a slightly sticky dough. The dough should not stick to your fingers but should feel smooth and slightly slippery. - Transfer the dough to a greased bowl, cover with plastic wrap, and let it rise for 1 hour or until it doubles in size. FILLING: - Mix the filling ingredients until fully combined. - Next, roll out the dough into a flat sheet, spread the filling evenly over the surface, and gently roll it up.
