Begin whipping immediately using a stand mixer or hand mixer on low speed, then gradually increase to high speed. Whip for 8-10 minutes, or until the mixture becomes thick, white, and fluffy. Transfer to a Pan: Line a baking pan with parchment paper. Add arrowroot or powder sugar or lightly grease the paper with oil or cooking spray to prevent sticking. Pour the marshmallow mixture into the pan and spread evenly with a spatula. Set and Cut: Refrigerate the pan for about 1 hour, or until the marshmallows are firm. Remove from the pan, cut into desired shapes, and dust lightly with arrowroot powder or powdered sugar to reduce stickiness (optional).
