Healthy Turkey Chili 🌶️ Ingredients: -olive oil -salt and pepper -1 red bell pepper diced -2 poblano peppers diced -1 yellow onion chopped -5-6 garlic cloves minced -1 lb. ground turkey -spice blend* -1 can dark red kidney beans drained and rinsed -1 can light red kidney beans drained and rinsed -28 oz. fire roasted crushed tomatoes -1 1/4 cup low sodium chicken stock/broth *spice blend: 4 TBL chili powder, 1 TBL cumin, 1 tsp dried oregano, 1 tsp onion powder, 1 tsp garlic powder, 1/4 tsp cayenne pepper, 1 tsp salt, 1 tsp pepper To a Dutch oven over medium heat, add a drizzle of olive oil. Add the chopped onion and peppers. Add a pinch of salt and pepper and stir. Sauté until veggies are nice and soft, about 7-8 minutes. Add garlic and sauté until fragrant, about 1 minute. Add the ground turkey and break apart with wooden spoon. Once cooked through, add spice mix and stir. Add beans, crushed tomatoes, and chicken broth. Stir and bring to a gentle boil. Reduce heat to low and let simmer for 30-60 minutes or until desired thickness is reached. I let mine cook for 60 minutes. Top with whatever toppings you like! I used scallions, jalapeño, cheddar cheese, and sour cream.
