Assegas Embark!  This past week marked the start of the year 2975 on the Amazigh calendar.  To celebrate, let’s make Berkouks & Amlou, a traditional Amazigh dish.  Berkouks is typically a larger hand rolled couscous. It can be steamed in the same method that a medium grade semolina couscous would be prepared. Don’t know the method?  Let me know in the comments below and I’ll drop a full tutorial. 👇🏼  The berkouks can be seasoned with a bit of Argan Oil or Oudi, clarified butter cooked with thyme.
