One Pot Chicken and Orzo Bake 🍋 Ingredients: 3 Tbsp olive oil 6 bone-in, skin-on chicken thighs Kosher salt and ground black pepper 2 lemons (sliced) 1 cup cherry tomatoes 3 garlic cloves (minced) 2 cups uncooked orzo 4 1/3 cups hot water 2 tsp dried oregano 1 tsp chili flakes 2 Tbsp consommé Fresh parsley (chopped, for serving) Method: 1. Preheat the oven to 350°F. 2. In a wide pot heat 1 Tbsp olive oil. Season the chicken liberally with salt and pepper on both sides and add to the pot. Sear for 7 min per side, or until golden. 3. remove the chicken thighs from the pot and set a side. 4. In the same pot, sear the slices from 1 of the lemons until caramelized and set them aside. 5. Pour the remaining 2 Tbsp olive oil into the pot. Chop the remaining lemon slices into pieces and add them to the pot with the cherry tomatoes. 6. Sauté over medium heat for 5 min, stirring constantly until the lemon starts to caramelize. 7. Add the garlic and sauté for 1 minute, until fragrant. 8. Add the orzo and stir for 5 minutes, or until lightly toasted. 9. Pour all the hot water. 10. Add the oregano, chili flakes, consommé and stir well. 11. Return the chicken to the pot and top with reserved lemon slices, cover, and transfer to the oven for 50 min. 12. Remove the lid and cook for another 10-15 min for nice and golden color. 13. Garnish with parsley before serving Enjoy 😉
