#banzapartner Recipe: Ingredients: 2 boxes (1 pound) @eatbanza Cavatappi pasta 2 Tbsp olive oil 4 large cloves garlic, minced 1 small zucchini, diced 1/2 white onion, diced 3 cups baby spinach (tightly packed! or 3 large handfuls) 1 cup cottage cheese 2 cups pasta sauce 1 teaspoon Italian seasoning 1 teaspoon onion powder 1 teaspoon garlic powder 1 teaspoon salt 1 cups pasta mozzarella Instructions: Preheat an oven to 400°F Bring a pot of water to a boil and add in the @eatbanza pasta along with a sprinkle of salt. Cook until al dente and rinse. Grab a 9 x 13 oven safe dish. Add the onion, zucchini, spinach, spices, marinara sauce, cottage cheese and gently stir until combined. Add the water and stir again to combine. Add the pasta into the baking dish and stir until well mixed and all the pasta is submerged in liquid. Cover the dish with aluminum foil and add it to the oven. Bake for 30 minutes. Remove the foil and, using a large spoon or spatula, give everything a good stir. Top the dish with shredded mozzarella and add back to the oven to bake, uncovered, for 5 minutes until the cheese is melted. Once baked, remove it from the oven, allow it to cool for 5 minutes.
