This one is still one of my all time favorite recipes 💯 . Cajun Chicken Alfredo Pasta 🐓🍝 Ingredients • 1.5 lbs. chicken breasts, boneless • ½ - 1 C blackening seasoning (I used @spiceology Black Magic rub) • Olive oil as needed • 3 T minced garlic • 1 (7 oz.) jar sun-dried tomatoes, drained & chopped • ¼ C white wine • 3 C heavy cream • ¾ C shredded parmesan • 1 lb. cooked spaghetti • ¼ C scallions For the Chicken: 1. Preheat both griddle burners to sear mode. Meanwhile, lightly apply olive oil to the chicken breast to act as a binder. Season the chicken breast liberally with blackening season until the chicken is well coated.  2. Once the griddle has preheated, add the chicken and cook for 15-20 minutes, flipping halfway through (leave one side of the griddle open to allow room to cook the sauce a the same time). Once the internal temperature registers 165 degrees, transfer the chicken to a plate and set aside until ready to use. For the Cajun Alfredo Sauce: 1. Place a large skillet with a splash of olive oil on the open side of the griddle. Once the skillet becomes hot, add garlic and cook until fragrant, about 1 minute. Next, add the sundried tomatoes and cook for another minute or so. Deglaze the pan with the white wine, then add the heavy cream and 2-3 T blackening seasoning. 2. Bring the mixture to a boil, then lower the heat to 350 degrees and continue cooking until the sauce has reduced and become spoon thick. Add in the parmesan cheese and stir until the cheese is melted and well-incorporated. Throw in the spaghetti and toss until the pasta is coated with the Cajun sauce and turn off the burner. To Finish: 1. Allow the chicken to rest for 5-10 minutes. Using a sharp knife, slice the chicken into ¼ - ½ inch thick slices. 2. Add the Cajun alfredo pasta to a plate with the carved chicken. We let our kids make dinner for us! So the challenge here is the kids cook us dinner and we give them zero directions or suggestions. The only time we interfere is if they are going to hurt themselves. We've done this experiment once before and it was very fun, it's nice to see how much they know and how far their skills have progressed. I think we're going to try and make it a regular thing. Cooking with kids is very fun but when you stand over them and constantly tell them what to do it's very hard to know how much they actually retain. Doing this will teach them confidence and let their skills really come through... or show what they actually truly retain which can be very funny at times. Try this out but be safe and don't forget to keep quiet... unless they are going to hurt themselves. Also another rule is everyone has to eat everything. Using a top round roast for beef ragu is one of my favorite ways to utilize this cut of meat 🥩 . Here’s how I did it: Ingredients • 3-4 lbs. top round • Worcestershire sauce • SPG rub • Olive oil • 1 medium onion, diced • 2 celery sticks, diced • 2-3 carrots, diced • 2 T garlic paste • 1 C red wine • 1 (28 oz.) can crushed tomatoes • ¼ C tomato paste • 1 tsp beef bouillon • 1 C beef broth • 2 tsp Italian herb seasoning • ½ tsp crushed red pepper + more to taste • 2-3 bay leaves • Salt to taste • 1 parmesan cheese rind + grated parmesan to serve • 1 bunch thyme • ½ box pasta (I used linguine here but typically I’ll use pappardelle) • Basil, to garnish Procedure: 1. Preheat your smoker to 300°F. Meanwhile, slice the top round into four equal chunks. Generously coat the chunks with Worcestershire sauce, then season all sides liberally with SPG rub. Once the smoker is ready, place the seasoned chunks on the grill. Smoke until they reach an internal temperature of 165°F. Remove the chunks from the grill and set them aside.   2. While the top round is smoking, start preparing the sauce. Heat a splash of olive oil in a skillet over medium-high heat. Once the oil is hot, add the onions, celery, and carrots, sautéing until they become tender. Stir in the garlic paste, cooking until aromatic. Pour in the red wine and let it simmer until it reduces. Next, add the crushed tomatoes along with the next 8 ingredients. Season with salt to taste. Add the smoked top round chunks and thyme to the skillet, partially cover it, and place it back on the grill.    3. Allow the mixture to cookuntil the meat reach an internal temperature of about 205°F and are fork-tender. Remove the chunks from the skillet, shred the meat, and return it to the sauce. 4. Meanwhile, prepare the pasta according to the package instructions, cooking until it’s just shy of al dente. Transfer the pasta to the skillet with the ragu, tossing to coat and finish cooking in the sauce.   5.
