✨ THAI SALAD WITH PEANUT SAUCE 😃 Follow @myfamilydinner for more recipes that simplify dinnertime. 🥘🍲🥕 ⬇️ FULL RECIPE ⭐️8 oz mixed greens ⭐️2 cups carrots, shredded or diced ⭐️2 red bell pepper, diced ⭐️1 English cucumber, diced ⭐️1/2 cup fresh cilantro, diced ⭐️1 (14.5 oz) cans chickpeas, drained and rinsed Peanut Sauce (Blend Together): ⭐️1/2 cup peanut butter ⭐️2 tbsp lime juice ⭐️1/4 cup coconut aminos ⭐️2 tsp garlic powder ⭐️1/4 tsp salt ⭐️1/8 tsp black pepper ⭐️1/4 cup Water, add more as needed to achieve desired consistency Directions: 1️⃣Add all peanut sauce ingredients in a high speed blender or food processor. Blend until smooth and set sauce aside . 2️⃣ Prep remaining ingredients, and mix together in a large bowl. 3️⃣ If serving immediately, drizzle sauce over greens and mix. 4️⃣ If serving later in the day, store sauce in an air tight container in the fridge and mix into salad right before serving. 5️⃣ Store leftovers in an airtight container in the fridge for 3-5 days.
