When I focus on eating lower carbs, I enjoy products like Mission Carb Balance Soft Tortillas for a lower calorie base to pair with my proteins and other goodies. This tortilla is only 70 calories and pretty filling. This Birria was made with brisket trimmings and leftover Birria liquid that I’ve kept in the freezer from a few months ago. I seared the beef chunks and added them to a Dutch oven with thawed Birria liquid plus some extra broth and cooked it in an oven covered at 300 degrees for 3.5 hours until the beef was tender. The Birria turned out fantastic and was the perfect protein for these lower-calorie Birria Quesadillas. I made some burritos too!
