I had an eggplant sitting in my refrigerator for a couple of days. Today I was determined to make something with it. I was going to fry it but I decided to make this easy , delicious, one pan Zaalouk instead. I have eaten this out in restaurants many times, but it was my first attempt making it at home. Next time I will definitely make a larger batch for meal prep as I think the flavors will come out even more over a few days. Zaalouk INGREDIENTS: 2 tbsp olive oil 2 tbsp garlic paste 1 large eggplant, peeled and chopped 4 plum tomatoes, chopped 1 tbsp paprika 1 tsp smoked paprika 1/2 tsp cumin 1/2 tsp cayenne pepper 1 tbsp sumac 2 tbsp tomato paste 1/4 cup fresh parsley, chopped 1/4 cup fresh cilantro, chopped 1/2 lemon salt to taste Heat a medium frying pan over medium high heat. Add the oil. Add the garlic and stir for a few seconds. Add the eggplant and sauté for about 2 minutes. Add the tomatoes, spices and tomato paste. Cook for another 2-3 minutes. Cover the pan , Lower the flame to medium-low and simmer for about 20 -25 minutes. Add the parsley & cilantro and lemon juice . Using a potato masher or spatula, break up the larger pieces. Taste add salt to taste , cover and cook about 5 minutes more.

Sautéed bok choy🤭 ingredients - 1 tbsps of olive oil - 2 green onions; chopped - 1 tsp of ginger puree - 1 tbsp of minced garlic - 1 pound of baby bok choy - 1 tbsp of soy sauce - 1 tbsp of honey - 1 tbsp of water - 1/2 tbsp of rice wine vinegar - salt to taste - sesame seeds for garnish Start by cutting the ends of the bok choy and separating the leaves; if desired. Then wash and dry. Then to a large pan, add oil, minced garlic, ginger and green onions. Saute for a minute or two. Then add in bok choy and coat in the garlic, ginger and green onions. Add in soy sauce, honey and water then mix. Cover and let the bok choy cook down until wilted 4-5 min. Then remove lid and add in rice wine vinegar; mix. Then serve and top with sesame seeds.
