RICE CAKE PEANUT BUTTER CUPS ✨ Full recipe below! This has been one of my TOP go-to healthy snacks whenever I'm craving a chocolatey treat! Here’s how to make it: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 1 rice cake - 1 Tbsp peanut butter - 1/4 banana, sliced - 2 Tbsp dark chocolate chips - 1/4 tsp coconut oil - flaky sea salt (for topping) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1. Top the rice cake with peanut butter and banana slices.  2. Mix the chocolate chips and coconut oil in the microwave, stirring until smooth.  3. Next, spread the melted chocolate into a thin layer over the rice cake and immediately sprinkle a little flaky sea salt over it. 4. Place in the freezer for about 10-15 minutes and enjoy! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I'm so obsessed with these easy peanut butter cup rice cakes and I know you'll love them, too! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ TIPS: - If you make several at one time, freeze extras in an airtight container with a lid to keep them from getting soggy! - Feel free to use less of the chocolate and drizzle it over the rice cake rather than fully covering it. - Top with any fruit you want! It’s quick, filling, and absolutely delicious-perfect for meal prepping lunch or dinner! Chickpea chaat salad in a jar🥗🫙 These need minimal effort! Prep it for lunch and you’ll be all set for a healthy vegetarian high protein meal that is delicious and filling! Deep Dish Pizza Bites 😋🍕 Recipe is in my Brilliant Bites cookbook! Make these easy bites for game day and mix and match with your favorite pizza toppings! RECIPE BELOW ⬇️  Ingredients: 🍕 4 burrito-size flour tortillas 🍕 1/2 cup pizza sauce, plus more for serving 🍕 1 and 1/2 cups shredded mozzarella 🍕 1 cup mini pepperoni or chopped pepperoni 🍕 1 tablespoon grated Parmesan 🍕 1 teaspoon dried Italian seasoning 🍕 1/4 teaspoon garlic salt Instructions:  1. Preheat the oven to 400°F. Spray two 12-cup standard muffin pans with nonstick cooking spray. 2. Using a 3-inch round biscuit or cookie cutter, cut 6 rounds out of each tortilla for 24 tortilla rounds total. Press each tortilla round into a prepared muffin cup. 3. Spread 1 teaspoon of pizza sauce onto each tortilla round and top with 1 tablespoon shredded mozzarella cheese. Arrange 5 mini pepperoni or pepperoni pieces on top of the cheese. 4. Bake for 10 to 12 minutes, until the cheese bubbles and starts to turn golden brown in spots. Let cool in the pan for about 5 minutes. 5. Meanwhile, in a small bowl, whisk together the grated Parmesan, Italian seasoning, and garlic salt. 6. Transfer the pizza bites to a platter and sprinkle with the Parmesan seasoning mixture.
