CHRISTMAS CRAVINGS EP. 5- LENTIL WELLINGTON

INGREDIENTS:
 1 sheet of puff pastry
1/3 of a yellow onion
1/3 of a bell pepper
3 large white mushrooms
4 cups cooked lentils
3/4 cup breadcrumbs
(Flax egg) 3 tbs ground flax seed + 1/2 cup water
2 tsp each - chopped fresh sage, rosemary + thyme
3 tsp each:
Salt
Pepper
Smoked paprika
Dried thyme
Nutritional yeast
Garlic powder 5 cups spinach

For Pan Gravy
1/4 cup plant based butter 1 seasoning cube 1 tsp browning sauce

INSTRUCTIONS
In a small bowl, add in the ground flax seed and water, stir to combine and set aside. Add onion, pepper and mushrooms to food processor and pulse until uniform in size. Sauté over med-hi heat until onions and peppers are translucent and mushrooms have released moisture. Add in all seasonings, lentils, breadcrumbs, and flax seed mix. Cook for about 3 minutes then transfer to a plastic wrap on a work surface. Form a log by hand then wrap tight in the plastic and chill in the fridge for at least 30 minutes. Sauté spinach until wilted and set aside. Roll out puff pastry then add layer of spinach followed by the lentil log, roll tight, cut excess dough away, then bake at 350°F for 35 mins. CHRISTMAS CRAVINGS EP. 3 - WINTER SPICED CARROTS & PARSNIP MASH INGREDIENTS: 1 bunch of carrots 4 parsnips 1 can of white beans, drained and rinsed For carrots Oil to coat 1/2 tsp allspice 1/2 tsp ground coriander 1/4 tsp cinnamon Pinch of salt For parsnip mash Roasted parsnips White beans 2 heads roasted garlic 1/2 cup plant milk 1/4 cup plant butter 1/2 tsp salt 1/2 tsp pepper 1 tsp dried rosemary 1 1/2 tsp dried thyme 3 tbs nutritional yeast INSTRUCTIONS Preheat oven to 385°F. Wash, trim and slice carrots. Toss with oil and spices listed above, set aside. Peel and chop parsnips into even pieces, toss with oil and a pinch of salt, set aside. Slice 2 heads of garlic, cover in oil salt and pepper, wrap in foil. Transfer everything to baking tray and roast for 30 minutes. Pulse parsnips and beans in food processor with ingredients listed above until desired consistency is reached then assemble. CHRISTMAS CRAVINGS EP. 2 - SCALLOPED POTATOES INGREDIENTS: 7 yellow potatoes 6 cloves of minced garlic 1/2 white onion, chopped 1 can of full fat coconut milk 1/2 cup cashews 1 & 1/3 cups of plant milk (recommend unsweetened almond or cashew) 1/2 cup of Nutritional yeast Salt & pepper to taste 1 tbs vegan butter 1 tbs chopped sage 1 tbs chopped rosemary 1 tsp smoked paprika 1 tsp onion powder 1 tsp garlic powder 1 tsp ground coriander INSTRUCTIONS Preheat oven to 375°F. Prep "cheese" sauce. Chop garlic, onion, rosemary and sage. Add plant milk, cashews, and nutritional yeast to a blender, process until combined. Set aside. Sweat garlic and onion in separate pan. Strain off blended mixture into the pan and add the coconut milk. Season with salt, pepper and rest of listed seasonings, add in vegan butter. Simmer until it coats the back of a spoon and leaves a trail when a finger is run through it. Slice potatoes and line in an oiled baking dish. Bake for 45 minutes covered then uncover and bake for 20 more minutes. Bagel Vegan chive cream cheese 2 tbsp vegan butter 1 tbsp freshly minced garlic orrr 1/2 garlic powder  1 tbsp freshly minced parsley 2 tbsp vegan Parmesan Pinch salt  -Slice bagel 4 times criss-cross, cutting down as far as you can without cutting through the bottom, then fill each slot with cream cheese.  -Melt the rest of the ingredients in a sauce pan over low heat until the Parmesan is mostly melted. -Dip both sides of the bagel in the butter mixture, then place the bagel on a piece of tin foil and drizzle the top with the rest of the butter. -Air fry at 400 degrees for about 8-10 mins or until golden and crispy! CHRISTMAS CRAVINGS EP. 4 - STUFFING & CRANBERRY SAUCE INGREDIENTS: For Stuffing 1 loaf French bread, cubed and dried OR 8 cups boxed bread cubes 4 celery stalks, diced 1 small onion, diced 1 cup mushrooms, minced 4 cloves garlic, minced 2 sprigs rosemary 3 sprigs thyme 2 cups vegetable broth 1-2 Tbsp poultry seasoning Salt and pepper to taste For cranberry sauce 3 cups cranberries (fresh or frozen) 3/4 cup coconut sugar 1/2 cup water Zest and juice of 1 orange 1 tsp cinnamon Small pinch of nutmeg 1 sprig rosemary + 1 sage leaf Instructions: Preheat the oven to 300°F. For the stuffing, cube your bread and lay out on baking tray, bake for 30 mins. Meanwhile add celery onion, garlic, mushrooms and herbs to food processor and pulse until diced texture is reached. Sauté for about 5 minutes with salt and pepper to sweat them out. Then stir in the bread cubes. Gradually pour in the vegetable broth, stirring until the bread is plump but not mushy. Season with all purpose seasoning, salt, and pepper to taste. Transfer to a baking dish and bake for 30 minutes at 400°F , or until golden on top. Meanwhile, prep the cranberry sauce. Combine cranberries, and all ingredients listed above in a medium saucepan over medium heat. Simmer for 10-12 minutes, stirring occasionally, until the cranberries burst and the sauce thickens, let cool slightly. NOT “CHICKEN” NUGGETS INGREDIENTS For nuggets: 1 can young green jackfruit 1 can chickpeas (keep chickpea water) 1/2 black of pumpkin seed tofu (or extra firm tofu) 3 tsp salt and pepper  1 tsp smoked paprika  1 tsp paprika 1 tsp onion powder 1 tsp garlic powder  1/4 cup aquafaba  1/2 cup chickpea flour For dredges: Drained chickpea water for wet dredge 1 cup chickpea flour 3 tsp salt and pepper  1 tsp smoked paprika  1 tsp paprika 1 tsp onion powder 1 tsp garlic powder  INSTRUCTIONS Drain and rinse your jackfruit, then squeeze out as much liquid from them as possible with a clean kitchen towel. Tear into shreds and roast at 350ºF for 15 mins with a drizzle of oil, salt and pepper. Drain and rinse your chickpeas but keep the liquid that comes int he can (aquafaba). Mash chickpeas in a large mixing bowl then add roasted jackfruit, pumpkin seed tofu, spices, aquafaba, and flour. Mix until well combined then form your nuggets, lay on a tray and freeze for 30 mins. Then coat in seasoned flour, aquafaba then back in the flour to fully dredge. Fry on medium heat for 3-5 mins total or until golden and crispy.
