I saw this deconstructed wonton soup recipe from Eat_figs_not_pigs and I HAD to try it out because it looked absolutely super delicious!! and I’m glad I did! I added shrimp to this recipe and a few other ingredients but it’s pretty much the same!! So good! Meatballs: •16oz ground pork (I used Jimmy Deans regular pork sausage) •1/2 pound finely chopped shrimp •1tbsp smashed ginger •chopped green onions •1/2 cup panko bread crumbs or as much as needed (you want a nice consistency to form your meatballs) •2 eggs •1tbsp lite soy sauce •1tbsp rice vinegar •1tbsp granulated sugar Broth: •2-3 tbsp of avocado or extra virgin olive oil •1/2 chopped onion •7-8 crushed garlic cloves •1 tbsp crushed ginger •2 cups beef bone broth •6 cups chicken broth •3 cups water •1/2 tbsp white pepper •1 tbsp lite soy sauce •1tbsp sesame oil •1tbsp rice vinegar •salt to your liking 1. In a large pot heat 2-3 tbsp of oil and add your onion, garlic and ginger into your pot and sauté for 4-5 minutes or until your onions start looking translucent. you might need to add more oil to prevent from burning or sticking to the bottom of your pot. 2. Pour in your beef broth, chicken broth, water, white pepper, soy sauce, sesame oil, rice vinegar and salt. Allow to come to a low simmer for about 15-20 minutes. 3. Strain your broth back into your pot to remove the onion, garlic and ginger pieces. 4. While your broth comes back to a low simmer start getting your meatballs ready. 5. Mix your pork, shrimp, ginger, onions, bread crumbs, eggs, soy sauce, rice vinegar and sugar. 6. Drop your meatballs one by one into your broth and allow them to cook for 20-30 minutes. 7. Chop your bok choy (add as much as you’d like) I added about three cups and your wonton wraps one by one (make sure they don’t stick together) cook for 5-10 minutes and you are done. 8. Top with green onions, chili oil and lime juice
