Zucchini Pizza Bites! 🍕🍕🍕 Ingredients - 4 large zucchini (about 2 inches in diameter) - ½ teaspoon ground pepper - ¼ teaspoon salt - ½ cup reduced-sodium marinara sauce - ¾ cup shredded part-skim mozzarella cheese - 16 slices pepperoni - 2 tablespoons finely grated Parmesan cheese Directions 1. Preheat oven to 350 degrees F. Cut zucchini crosswise to make 16 (1-inch-thick) slices. Arrange the slices in a single layer on a rimmed baking sheet. Sprinkle with pepper and salt. Bake until starting to soften, 15 to 18 minutes. Remove from oven; top evenly with marinara, mozzarella and pepperoni. 2. Switch the oven to broil and place a rack 8 inches from the heat. Broil the bites until the cheese is lightly browned and the pepperoni is crispy around the edges, about 5 minutes. Sprinkle with Parmesan. These gluten-free, dairy-free, refined sugar-free ZUCCHINI BROWNIES were one of my top recipes of 2024 and for good reason! 😋🍫 So easy to make and no one will ever guess that they’re healthy! 🙌 Ingredients  1 small / medium zucchini  1 egg  1/4 cup cocoa powder 1 cup oats 2 tbsp melted coconut oil  1/2 cup coconut sugar (use 3/4 cup for sweeter brownies — can also sub monk fruit for sugar-free)  Choc chips (for topping) Blend all ingredients and pour into a parchment paper-lined loaf pan. Top with chocolate chips. Bake for 25-30 min at 350F. I’m on my third slice 😌 2 cups AP flour (I used GF 1:1)  1 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon ground cinnamon ½ teaspoon ground nutmeg ½ teaspoon salt 2 eggs ½ cup maple syrup  ½ cup melted coconut oil 2 teaspoons vanilla extract 2 cups grated zucchini (about 1 medium zucchini, excess moisture squeezed out) ½ cup chocolate chips  Grease a loaf pan and preheat oven to 350. Mix together wet ingredients. Mix together dry ingredients. Combine. Fold in chocolate chips. CHICKEN ZUCCHINI POPPERS 👩🏼‍🍳 This is a super clean recipe that DELIVERS!! You could meal prep these, make them for game day, or have them for dinner with some veggies! INGREDIENTS: -1 pound ground chicken breast (raw) -2 cups grated zucchini (leave peel on and squeeze out some of the liquid with paper towels) -2 green onions, sliced -3–4 tbsp chopped cilantro -1 tsp minced garlic -1 tsp salt -1/2 tsp black pepper -3/4 tsp ground cumin  DIRECTIONS: 1. Preheat oven to 400F and line a baking sheet with parchment paper. Set aside. 2. Grate zucchini and blot with paper towels to squeeze all the excess moisture out. (Don’t skip this- you don’t want it wet!)  3. In a large bowl, mix together chicken, zucchini, green onion, cilantro, garlic, salt, pepper, and cumin. 4. Scoop meatballs onto prepared baking sheet with a small scoop or tablespoon and gently press down with your palm for that “popper shape.” 5. Bake at 400F for 20-25 mins, or until cooked through. 6. Zucchini risotto with crispy white fish and yuzu foam by @omer_yaskil Broth: 1 zucchini 1 yellow squash 1 white onion 3 garlic cloves 1 cup milk 2 cups water 5 tablespoons/75 grams butter Olive oil Fresh basil Risotto: 1 cup Arborio rice 2 tablespoons butter + 3 more for finishing 1 small onion, finely chopped ½ zucchini, finely chopped ½ cup Parmesan, grated Fish: 2 white fish fillets (sea bream, bass, or similar) Salt and pepper to taste Yuzu foam: 2 tablespoons cream 2 tablespoons milk 1 tablespoon yuzu juice (or lemon if unavailable) Pinch of salt Broth: Heat oven to 390°F (200°C). Arrange the zucchini, squash, onion, and garlic on a baking sheet. Drizzle with olive oil and roast until golden brown, about 20 minutes. Transfer the roasted vegetables to a medium pot. Add the milk, water, and butter, and bring to a boil. Add the basil, then purée the mixture until smooth. Strain through a fine-mesh sieve and set aside. Risotto: Melt 2 tablespoons of butter in a medium pot over medium heat. Add the onion and zucchini and cook, stirring, until softened, about 3 minutes. Add the rice and cook, stirring, for 1 minute.
