Here's how I made this stunning sunflower seed sourdough loaf! 🌻 I started with ripe active starter and my beginner sourdough recipe- but I swapped 20g of bread flour for dark rye flour for extra depth of flavor. Bulk fermented overnight for around 10 hours at about 72°F (didn’t measure temp because, well... I was sleeping). In the morning, I shaped the dough, sprayed the top with water, and rolled it into raw organic sunflower seeds. I placed it in the banneton, stitched it up and let it cold proof in the fridge for 7 hours. Baked at 450°F: 30 minutes covered, 15 minutes uncovered. In a small saucepan, heat 2 cups of blueberries over stovetop with 1 tbsp maple syrup. Once simmering, turn off heat and gently mash berries with a fork or spoon to release juices. Let cool. - Add flour and blueberries to the large bowl with your proofed yeast, stirring until a shaggy dough forms. - Transfer dough onto a floured surface and work with your hands to form a dough ball, adding more flour as needed if too sticky. Transfer dough to the same large mixing bowl, lightly oiled. Cover with plastic wrap & let sit on counter for about 1 hr, until double in size. - Divide dough into 8 equal pieces and roll into a ball. Arrange dough pieces on a lined baking sheet and cover with a kitchen towel or plastic wrap to let rise another 30 mins while your oven preheats. - Preheat oven to 350℉. Place a lightly greased cast iron skillet over medium high heat. Dip each side of the dough ball into a bowl of corn meal before pan frying for 1-2 minutes each side, until a golden brown crust forms. Reduce heat to medium low if they are cooking too quickly. - Bake at 350 F for 10 minutes to ensure they are cooked all the way through. Allow to cool some before slicing and serving. Homemade sandwich bread. In a large bowl, add 2 cups warm water (roughly 110 degrees), 1 tbsp active dry yeast, and 1 tbsp honey. Stir then let bloom. Once your yeast is activated, add 2 tsp salt, 2 tbsp melted butter, and 1/4 cup honey. Stir then add 5 cups of flour - either bread or all purpose. Stir. Once your dough starts to stick to your spoon or spatula, knead with your hands - either in the bowl or on the counter. If your dough is still a little sticky, you may need to add more flour. Once your flour is fully incorporated and your dough is no longer sticking to your hands, place your dough in a greased bowl and cover with either Saran Wrap or a damp towel. Let rise for an hour or until doubled in size. After your dough has doubled, it’s time to shape into loaves. Cut your dough in half and roll into a loaf - making sure to pinch the seams. Place in a greased loaf pan, cover, and let rise for another 30 minutes (or until doubled in size). After the 30 minutes, it’s time to bake. Bake at 350 for 35 minutes. Once out of the oven, top with butter. Allow your dough to cool completely before cutting. Vegan Na’an with garlic topping    4 1/4 cups all purpose flour  2 cups of warm water 1 tablespoon sugar   1 teaspoons yeast 1 teaspoon salt 1 tablespoons Extra virgin olive oil  In a large bowl put the water, yeast, and sugar, and let it sit for 5 minutes then add the flour and salt. Mix with a spoon first then when the dough becomes thick mix by hand or mixer for 5 minutes. Then use the oil on your hand knead in few more time and allow the dough to rest in a warm area covered with a warm towel for 1 hour. Once it raises Cut the doll into ball shape..  Place that in the oven or warm area for another 30 minutes to rise. Use a griller pan or your regular pan on the stove top medium heat add a little bit of oil on top and go ahead and flatten out the dough by stretching it or rolling it out with a rolling pin, Once you flatten it go ahead and place it on top of the hot pan and let it sit for 1 to 2 minutes or until golden brown on one side. Go ahead and flip it over and let it sit for another 1 to 2 minutes then flip. Soft Crust Sourdough Recipe: Ingredients: 100g active sourdough starter 350g filtered water 25g oil (avocado or olive) 475g King Arthur unbleached bread flour 25g dark rye flour  10g salt (Dark rye is optional- if you don’t have rye flour, use 325g water and 500g bread flour) Instructions: 1. In a large bowl, mix the starter, water, and oil until you get a milky consistency. 2. Add the flour and salt, and mix until you have a shaggy dough. Cover and let it rest for 1 hour. 3. Perform 4 rounds of stretch and folds, spaced 30 minutes apart. 4. Allow the dough to bulk ferment on the counter until it’s bubbly and airy (time depends on dough temperature). 5. Shape the dough and place it into a rice floured banneton basket. Cover and refrigerate overnight (14–24 hours). 6. The next day, preheat your oven to 450°F with a Dutch oven inside. Remove the dough from the fridge, score the top, and bake: 30 minutes covered 15 minutes uncovered 7. Let the loaf cool completely before slicing.
