First recipe of the year from my kitchen! 🎉  Claypot rice is his favorite dish I make, I’m looking to experiment with more variations this year. Stay tuned 👀 Here’s the recipe for Claypot Rice with Black Bean Spare Ribs: Ingredients:     •    1 cup rice     •    1 cup hot water     •    500g pork spare ribs     •    1 tbsp Chinese black bean paste     •    2 tbsp light soy sauce     •    1 tbsp oyster sauce     •    1 tsp dark soy sauce     •    1/2 tsp sesame oil     •    1/2 tsp white pepper     •    1 tbsp cornstarch     •    1 Thai chili (optional)     •    4-5 garlic cloves (minced)     •    Scallion (for garnish) Instructions: 1️⃣ Wash and soak rice for 1 hour. 2️⃣ Cut spare ribs into bite-sized pieces, rinse, and marinate with soy sauces, sesame oil, black bean paste, white pepper, cornstarch, Thai chili, and garlic. Let it rest in the fridge for 30+ minutes. 3️⃣ Heat oil in the claypot, coat the rice with it, and add hot water. Simmer on medium-low with the lid on for 5 minutes. 4️⃣ Reduce heat to low, make small holes in the rice, and add the marinated spare ribs. Cover and cook for 10 minutes. 5️⃣ Drizzle neutral oil around the pot’s edges and rotate it over medium low heat for 10-12 minutes to crisp up the bottom rice. 6️⃣ Double check the spare ribs are cooked through. Garnish the dish with chopped scallion. DEEP FRIED SHRIMP BALLS! Inspired by the talented @patty.plates 👏 INGREDIENTS (7 shrimp balls)  - 1 dozen 13/15 shrimp (peeled & deveined)  - 1 qt of oil - 1 tsp of granulated chicken bouillon - 1 tsp of sugar  - 1 tsp of garlic powder - 1/2 tsp of shaoxing wine - 1.5 tsp of egg whites - 1/2 tsp of MSG  - 1 tsp of cornstarch  - 1 cup of panko breadcrumbs - 1/4 cup of all purpose flour  1. Clip 1/4 inch of the shrimp tail  2. Mix seasonings with the shrimp into the food processor and blend for approximately 10 seconds  3. Lather oil into the palm of your hands, then add approximately 1.5 tbsp of shrimp blend and shape into a sphere  4. Toss with the panko and flour mix and fully coat  5. Insert shrimp tails into the shrimp blend  6. Fry on medium heat for 2-3 mins or until golden  Enjoy with chili oil, soy sauce and white pepper!
