Caldo de camarón my way 🦐 Ingredients: - 2 lbs shrimp, peeled and deveined - 4 tomatoes - 1/4 onion - 4 cloves garlic - 2 chipotle peppers - 5 chiles guajillos - 3 chiles de árbol - 1 tsp oregano - Carrots - Celery - Potatoes - Fresh cilantro - Green onion Instructions: 1. Heat the olive oil in a large pot over medium heat. Add the tomatoes, onion, chiles guajillos, chiles de árbol, and garlic. 2. Pour in 1 cup of water and add oregano. Cover and cook for 10 minutes, until soft. 3. Add everything to a blender, add 2 tbsp of chipotle peppers, and salt to taste. Blend until smooth. 4. In a large pot, add 10 cups of water and the blended mixture. Add any additional seasonings if needed. 5. Add all your veggies. Reduce the heat and let it simmer until the vegetables are tender, about 10-15 minutes. 6. Add the shrimp, green onion, and cilantro to the pot and cook for about 4 minutes (don’t overcook the shrimp). 7. Serve the caldo hot. Enjoy your delicious Caldo de Camarón!
