Even Mr. Picky loved them, so you know they are good😉 Higher in Protein Loaded Egg Muffin Bites Makes 12 6 large eggs 1 cup whole milk cottage cheese 3 frozen hash browns cut up 1/4 cup diced green bell pepper 1/4 cup diced red bell pepper 1/4 cup diced orange bell pepper 3-4 slices cooked bacon 1/2 tsp garlic powder 1/4 tsp salt 1/4 tsp ground pepper 1/3 cup shredded cheese Instructions: 1. Preheat oven to 350 F 2. To a food processor or a high powered blender add eggs, cottage cheese, salt & pepper, garlic powder, and blend until smooth 3. Add in the cut up frozen hash brown pieces, diced bell peppers, diced cooked bacon, and mix 4. Spoon mixture into silicone muffin tops 5. Sprinkle the tops with shredded cheese 6.
