Seed oils are not inherently causing inflammation or weight gain. In fact, the research points to the exact OPPOSITE — but that’s for another post. Regardless of this, people still LOVE to demonize them and blame them for everything. Why is that?? Well, it’s simple — if you don’t understand science very well, it’s easy to ignore confounding variables. Seed oils, like canola or soybean, are very cheap in comparison to olive oil, butter, and tallow. In the food industry, cheap is appealing — because you can use more of it without driving up the cost. That’s why restaurants fry their foods in seed oils, and processed foods often use them. It makes financial sense. However, this low-cost means MORE is used. There is simply a higher incidence of seed oil use across processed foods and dining out, so now we have a CORRELATION. High intake of these foods means a HIGH CALORIE intake overall — leading to weight gain and its related issues. But if you consume seed oils while keeping your calories under control, it will not lead to inflammation, weight gain, or any of the other unique health problems that these influencers are falsely claiming. In the end, it’s all about CALORIES and nutritional quality. Cooking your eggs in a little bit of canola oil spray isn’t the same as having chicken fingers and fries that were deep fried in re-used vegetable oil. ——
