Unstuffed Peppers Freezer Meal🫑 I'm on the hunt for some freezer meals to be able to make for food trains. For postpartum Moms, or someone going through a loss. This one came out pretty good, and made the cut to use again in the future. With a few minor adjustment, I would definitely add a cup of shredded cheese in each meat mixture next time and double the salt. You could freeze both, I ate one to give it a taste test. Unstuffed Peppers (for 2-9x13 pans) 2 Tb Olive oil 3 lbs ground beef 2 sweet onions chopped 4 peppers chopped 2 cans of diced tomatos 14 oz 1 Tb Worcestersire sauce 2 tsp garlic powder 2 tsp Italian Seasoning 1 tsp sea salt (I would do 2 tsp of salt next time) 1/2 tsp black pepper 3 c beef broth 2 c Jasmine Rice 6 c shredded cheese of your liking (I used Colby Jack Cheese) Preheat your oven to 350 degrees. Start cooking the rice and beef broth enough for the rice to absorb the broth, this helps speed up the baking time. Brown the ground beef and drain off the fat. Add olive oil to a skillet and sauté the chopped peppers and onions for 5-8 minutes over medium heat, stirring occasionally. To the sautéed vegetables add in the browned ground beef, seasonings, 2 cups of shredded cheese and canned tomatoes. Mix in the rice and devide between two greased, 9 x 13 freezer pans or baking dishes if you don't plan on freezing them. Top each pan with 2 cups of shredded cheese and bake for 20 min. Check and make sure the rice is cooked through. To freeze: Let the dishes cool completely before placing on the lid and wrapping in aluminum foil. Label with the date you made it, name of the dish, and instructions to: Thaw and bake @350 degrees for 20 minutes or until heated through.
