Sourdough: (my way) -1 1/4 to 1 1/2 cup water -roughly 1 cup starter -3 to 4 cups flour -salt maybe a t -honey(optional) -butter(optional) Mix all together and knead until it passes the window pane test. I go mostly off feel. the dough should be soft and elastic but not sticky. If you use fresh milled flour i highly recommend NOT adding any more flour/water until you've kneaded for several min. And if it is still not coming together then decide if it needs more water/flour. Cover and let rise. Time will depend on the temp of your house. Punch down, shape, and let rise agin.
