LEMON CHICKEN SOUP 🍋 1 cup carrots 1 cup celery 1 yellow onion 4 minced cloves of garlic 6 cups chicken broth (add extra if needed) 1/2 cup orzo 2 chicken breasts shredded (I used rotisserie) 1 tsp pepper 1 tsp salt 1 tsp oregano 1/2 tsp garlic powder 2 egg yolks 3/4 cup lemon juice (about 3.5 lemons) 1 cup spinach cut up about 1 tbsp fresh parsley about 1/2 tbsp fresh dill sauté onions and garlic in olive oil on medium-low heat until lightly translucent add carrots and celery and stir well until slightly softened pour in broth, pepper, salt, oregano, garlic powder, & orzo, and simmer 10 mins spoon out 1 cup of hot broth and set aside. in a bowl whisk together 3 egg yolks until scrambled. slowly pour in hot broth in eggs while whisking. this will gently cook the yolks. then pour into the rest of the mixture and stir add shredded chicken and lemon juice to soup. Simmer for minutes add fresh dill and parsley serve & enjoy
